The Hudson Valley has seen rapid population growth from NYC residents as a result of the Covid pandemic, but restaurants and grocery stores have yet to catch up. TALLOW will solve this urgent demand by opening our first location in Millerton NY, located 2 hours north of NYC and 15 minutes from the Metro North train.
Nearly 23 thousand people live within a ten mile radius and 54 thousand live within a 20 mile radius, according to 2020 census data. This of course does not include post-pandemic population growth, driven primarily by upper-income households leaving the city. 81% of Northeastern Americans consume fast food at least weekly, more than any other U.S. region. However, there are ZERO fast food drive-thru restaurants within an 18 mile radius.
Not only will TALLOW fill this clear market gap, but we will do so with nutrient-rich ingredients sourced from local regenerative farms. Our unique offering allows us to target fast food frequenters and the fast-growing populace of health-conscious eaters who know that grass-fed beef and whole, unprocessed food is good for you. Our smashburger and tallow fries will be priced at $18: a slight premium to national fast food chains, on par with the local diner, and 40% lower than the farm-to-table restaurant down the street.
