
ABOUT THE FOUNDERS
I'm Austin, a 30-year-old New Yorker with a passion for real food. I graduated with a degree in Industrial Engineering from Purdue University, spent the last 8 years becoming an expert in client service and sales, and developed a deep understanding of metabolic health through food.
As a teenager, I struggled with obesity and chronic fatigue, trying every fad diet and exercise video to lose weight. By 17, I was exhausted, frustrated, and felt hopeless about improving my health. While my family seemed to stay effortlessly healthy, I was struggling and unhappy.
Shortly after the photo on the left was taken, my mom gave me some tough love – I needed to get my health in order. I started working with a personal trainer at the YMCA and cut out processed foods from my diet. I lost 40 pounds in 4 months, then another 20 through the winter. My energy and happiness soared – I felt like a new person.
This experience taught me two vital lessons: anything is possible, and a real food diet is essential to health. In recent years, I've learned about the toxicity of our food system, the misleading advice from so-called health "experts", and what's truly necessary for health.
That's why I'm launching TALLOW, driven by a single mission: to regenerate American health with real food. I'm tired of seeing "heart-healthy" ultra-processed foods dominate grocery stores and drive-thrus, damaging our cellular functions and fueling the chronic disease epidemic. I deeply empathize with those who feel hopeless about improving their health.
I'm putting together a founding team of elite chefs and mission-driven people to redefine what "fast food" can be. Indeed, a burger can be healthy when made with tallow-seared, regeneratively-raised, grass-finished beef, grassmilk cheese, organic vegetables, and unprocessed milled flour!
From breakfast smoothies to steak bites, everything we serve will be rich in micronutrients and vitamins essential for metabolic health. We'll help our customers unlearn the misleading "food pyramid" by detailing each ingredient and its health benefits on our menu. We'll also reconnect communities with their food sources through member events and locally-sourced menu items.
